What you need

avocado

cup cooked quinoa

cup fresh mint

cucumber

tbsp fresh lime juice

cup water

tsp salt & pepper
Instructions
1 Place the quinoa in a fine-mash strainer and rinse under running water until the water turns clear. This should take around 3 minutes. 2 Place water, red quinoa and a pinch of salt in a pot. Bring it to a boil, lower the heat, put the lid on and cook until all the water is absorbed, 12-15 minutes. 3 Turn the heat off and place a paper towel between the pot and the lid. Let it cool. 4 Place cooled quinoa in a big bowl and mix it with all the other ingredients. 5 Season to taste.View original recipe
