Lentil Salad with Olives and Feta Cheese

A vegetarian Mediterranean-style lentil salad with feta cheese, olives, red onion, and fresh mint. A refreshing side dish that is ready in less than 30 minutes.

What you need

cup vegetable stock

cup water

bay leaf

tsp salt

tsp black pepper

clove garlic

tbsp extra-virgin olive oil
tbsp white-wine vinegar

cup red onion
cup fresh mint leaves

cup feta
Instructions
1 Place the lentils in a saucepan along with the vegetable stock, water, bay leaf, salt and pepper. Let it come to a boil over medium heat. Turn the heat down to low and let is simmer for 15-20 minutes or until lentils are cooked. 2 For Dressing, whisk together the olive oil white wine vinegar in a large salad bowl. Add in the red onion and mint leaves. 3 Fish out the garlic and bay leaf out of the saucepan and drain the lentils. 4 Transfer the warm lentils into the salad bowl with the rest of the ingredients. Give it a gentle toss. Add in the crumbled feta. 5 Taste for seasoning and add if necessary. 6 Serve immediately.View original recipe
