What you need

cup water

tbsp coconut oil

tsp ground cinnamon

pinch kosher salt

cup almond milk

cup fruit
tbsp nut butter

maple syrup
Instructions
1 Place quinoa in a strainer and rinse under cold water. Place it in a large microwave safe bowl. 2 Pour in the water. Stir in ground cinnamon, oil, and salt. Give it a mix and make sure that quinoa is fully submerged in water. 3 Cover the bowl with a large microwave safe plate (or a microwave cover). 4 Place in the microwave and cook on high for 6 minutes. Carefully remove the plate, give it a stir, put the plate back on top and cook for 2 more minutes. 5 Remove and let it sit covered on the counter for 2-3 minutes. At this point, it might still have some liquid in the bowl. You can either let it rest for a few more minutes or drain it. 6 Divide it amongst bowls. If preferred, drizzle each bowl with almond milk (I usually warm mine up a bit) and top it off with fruits like kiwi, pomegranate arils, and banana slices. If you want you can also drizzle them with a little bit maple syrup for some extra sweetness.View original recipe
